Strawberry Salad w/smoked blue cheese

This is one of my favorite salad recipes. It is easy, fresh and delicious!

Start with the basics: chopped lettuce, sliced strawberries and crumbled smoked blue cheese.

The dressing is a simple vinaigrette.

2 TBS. strawberry jam

1 TBS. balsamic or red wine vinegar

3 TBS. extra virgin olive oil

salt and pepper to taste

Whisk everything together until it looks like this:

What really brings this salad together is the awesome taste of the smoked blue cheese. I have tried it with Gorgonzola and regular blue cheese but the smoked blue cheese is the best!

Types of Bacon

Here at Lawrence’s Smoke Shop & Country Store we love bacon! We offer some of the finest bacon around but what is the difference?


Cob Smoked Bacon is probably our biggest seller because it is what we have had for years. The cob stands for corn cobs. Instead of traditional smoking with wood chips, our bacon is smoked with corn cobs. It is amazing and no words I could say here would describe it accurately.

Peppered Bacon is the same as above but completely covered with peppercorns on the outside. You do not have to love pepper to appreciate the wonderful flavor of this bacon.

Uncured Fruitwood Bacon is the last of our regular bacon. It is uncured which means there are no added nitrites. Nitrites are salt in case anyone is wondering. It is smoked with apple and cherry woods for a delightful taste.

Then we have Canadian Bacon which is smoked with applewood. It is lean and fully cooked unlike the other bacon’s. It is as easy to prepare as it is tasty!

The real gems are the Bacon Ends. They are the ends of the slabs of bacon or pieces that did not slice properly. Less per pound and smaller packaged, they are great for almost anything including baked beans, soups, casseroles, salads, pizza and so on. The end pieces are chunks of meat so you can cut them to any size desired. Fun and yum!

Bacon has become a huge part of our food culture and I am proud to say we offer some of the finest you will find here in Vermont or perhaps anywhere.

Two ways to cook Bacon

BACON is one of the most versatile foods available. It is great for any meal or as a snack and recently has claimed its spot in the dessert circle.

Today we will go into the two best ways to cook bacon. The first way is to bake it in the oven. I recommend using aluminum foil but you do not have to. It makes clean up much easier and it seems to cook more evenly. Here is what you want to start with.

Preheat your oven to 400 degrees. Cook for about 10 minutes then rotate. If you are using an electric oven you might need to rotate the cookie sheets from front to back. Flip the bacon and put it back in the oven. It usually takes about 20-25 minutes to cook but may take more or less depending on your oven.  When you are done you should have this…

There are two advantages to cooking bacon in the oven, one is the pieces stay nice and flat and the other is that you do not have grease splattering everywhere!

But there is nothing like the taste of fried bacon! So we continue on…

Usually I cook my bacon on medium high but today I am using an electric grill because it is what we have here. It is the same idea as cooking it in a frying pan.

I tend to play with my food a lot so I am constantly flipping it, probably more than needed but make sure you do flip it every couple of minutes or it might stick or burn. It cooks quicker this way so make sure you stay close to make sure it doesn’t over cook. Then you will end up with this…

Lawrence’s Smoke Shop & Country Store is one of a kind with only one location in Townshend, VT. The only extension of this is our website.


Established in 1964 by Merrill and Norma Lawrence, the smoke shop is a small community of its own. Behind the rustic walls you will find some of the best things Vermont has to offer. Meat is our specialty but the cheese is just as worthy! The original owners sold the business about 10 years ago. Even though they are no longer with us, we still try to keep things the way they were back in the day.


This blog is a journey I hope you will continue with me. Even though most of our meats are fully cooked there are endless possibilities to their culinary potential. Food is an essential part of our being but to some it is so much more. I am part of the some. Serving meals I have prepared for my family is one of my favorite passions, now I hope to bring that same passion to you. Love the food you make and give it to the ones you love, unless it is bacon.
